Hard cheese is among the most demanding products to package. The irregular shape of the portion, the crust that continues to “breathe” after cutting, and the need to preserve intense aromas built up over months of aging make each reference a technical challenge in its own right. Added to this is the variety of destination markets: from Italian retail to international exports, where packaging must communicate quality and origin immediately.

The project

The packaging of hard cheeses is a complex technical challenge: the irregular shapes, the need to preserve intense aromas and the management of the “respiration” of the product require precise solutions. With the thermoformer VKF70, we have responded to these needs by integrating two packaging technologies on a single machine:

  1. Protective Atmosphere (MAP): Ideal for retail distribution, it guarantees an extended shelf-life while keeping intact the organoleptic characteristics and aesthetics of the portion with a wrap-around label.
  2. Vacuum packed: Perfect for high-end retail and export. The film adheres to the cheese's irregular profile, offering a premium presentation and a total oxygen barrier.

The VKF70 allows you to switch from one system to another with quick format changes, adapting to different sizes without ever compromising the quality of the sealing.
